Ingredients: 1/2 cup cilantro 3 green onions 2 avocados 2 tomatoes 1 can white corn 1 can black beans 1 envelope Good Seasons Italian Dressing Tortilla Chips (scoops work well) Optional: chopped red, yellow or orange peppers
Directions: Finely chop cilantro and green onions. Cut avocados into small chunks. Dice tomatoes. Drain corn and beans (rinse beans well). Prepare dressing according to directions on package, but add 1 Tbsp. sugar. Add a little more of any ingredient you especially like. Omit anything you don't care for. Put all ingredients into a bowl and dress. Serve with tortilla chips.
1 large can artichoke hearts, coarsely chopped (not marinated) 1 clove pressed garlic 1 cup monterey jack cheese, grated 1 cup mayonnaise 1 cup parmesan cheese – fresh is best 1 - 4 ounce can diced green chilis
Directions:
Mix the above ingredients together and put in a baking dish. Bake at 350 degrees for 30 to 35 minutes.
Serve warm with crackers or pieces of toasted sour dough bread.
